My profession is being a meat cutter. This is my first beef tenderloin I've ever tried; cut by yours truly.

Believe it or not how small it is, a tenderloin holds the most trimming yeild of any meat. I cut a whole top round with just a hand full of trimmings. A tenderloin on the other hand accumulates alot. You have to take all the fat off.

I hear ya, a 4lb tenderloin ends up with one pound of waste on average.

What ya making out of it? steaks? braised roast? beef wellington?

Mine was a 7 pounder. This is half of it. I'm marinating it in lemon juice, worcestershire sauce, oil, salt, pepper, garlic sauce and then I'm just going to put butter on it and throw it in the oven.

"Skin off, small pieces". We get that 200 times a day and it drives me nutz : D


Update: let's just say I'm a better cutter than a cook. My mom can cook eye round steaks more tender then I just cooked it.

Pretty impressive, we use the eye of round for beef jerky at our shop. Eye of round is just too chewy.
I prefer the ribeye steak or porter house the most, excellent flavor with the right amount of tenderness. I have learned to actually enjoy it but most of the guys hate it because it's the most overrated tasteless cut of meat unless you like liver. I found using a cast iron skillet with a 1/2 a stick of butter and some olive oil with chopped onions works out pretty well, gotta let the onion burn a little bit then pour the oil over the steak when done. There is a good reason tenderloins are often wrapped with bacon or dressed up, tasteless meat but oh so tender. Getting the fat content back in it is key.
This here is a great recipe when I make a tenderloin roast. I don't make the sandwiches out of it.
